Corned Beef and Aloo (potato)
MEAT
A staple in most Caribbean households. This dish is ready in 20 mins flat and is a crowd pleaser every, time, typically served with white rice, but I love mine with either fried bake or roti.
Each household will have its own version of making this wholesome dish, here’s mine.

FISH
These crispy balls of deliciousness were one of my favourite snacks that my mum would make, dunked in some hot pepper sauce or mango sour they would never last long - best eaten hot off the stove

FISH
This dish is a typically Caribbean dish, each household, and each Caribbean country will have its own way of making it, and many traditionally have it for breakfast.
Guyanese Oil Roti
VEGETARIAN / VEGAN
The perfect accompaniment to any curry. Soft, flaky warm oil roti (or some call it paratha roti). Here’s my mum’s recipe. I’m yet to master getting them round every time, but it’s the taste that counts!
Boneless Guyanese Lamb Curry
MEAT
This is my trusted Lamb Curry recipe. It’s actually my mum’s recipe so I can’t really claim it as mine! It's an instant crowd pleaser every time! I’m team potatoes when it comes to curry, I always want potatoes in my curry, but if they are not for you, you can just leave them out. For me, they definitely add flavour and thicken up the gravy. I like my lamb on the bone for curry. If you do too this recipe still works just swap out the boneless meat for meat on the bone.
Mac and Cheese / Macaroni Pie
VEGETARIAN / VEGAN
This is my foolproof Mac & Cheese recipe! A crispy stringy cheesy comforting side dish, for me this dish goes alongside a big Sunday dinner of Oxtail, rice and peas, fried plantain and callaloo! But it’s equally delicious eaten with fried chicken or just on its own!
Jamaican Oxtail Stew
MEAT
This dish requires slow Sunday cooking. You can’t rush it, it needs to take its time and ideally you want to season your meat the night before, so save this recipe for when you’ve got enough time and fancy a slow lazy Sunday. All the rich delicious, melt in the mouth goodness makes this is the perfect soul food Sunday meal.
Carrot Cake
NUTS
This quick and easy carrot loaf cake is always a crowd pleaser. The orange zest in the icing gives it that extra boost of flavour too.

A key ingredient when cooking any meat or fish dish in the Caribbean, it can also be used to add flavour to any vegetarian or vegan dish too.
Guyanese Chicken Curry

Yes, I said chicken curry and not curry chicken. This is a staple in most Guyanese households. My recipe is pinched from my mum because we all know mums chicken curry is the best!
Guyanese Pholourie
VEGAN
Pholourie is a type of fritter made with seasoned split pea flour. The batter is thick but runny enough to be dropped into hot oil, then shallow-fried until golden brown. Crispy on the outside and soft and fluffy on the inside! Delicious served with some mango sour or tamarind chutney.
Sausage Tray Bake
MEAT
A fantastic winter warmer, wholesome, full of flavour and healthy! I've used 50% pork sausages for this recipe, the remainder 50% of the sausage is made from vegetables (chickpea, spinach and red pepper) they are from Waitrose, but any sausages of your choice would work in this dish.
Homemade Hummus

Once you master this homemade hummus recipe you’ll never want to buy shop bought hummus again. Great for using up tins of chickpeas in the back of your pantry. It’s the perfect work from home snack, great for kids and is an excellent all-rounder for picnics!
