Carrot Cake
No long description or story here, we’re going to get straight to the details. This quick and easy carrot loaf cake is always a crowd pleaser. The orange zest in the icing gives it that extra boost of flavour too.
Ingredients
For the Cake
180g self-raising flour
200g caster sugar
140ml vegetable oil
2 eggs
300g grated carrots (I used 3 carrots)
80g chopped walnuts/pecans (optional)
2 tsp ground cinnamon
½ tsp Allspice
½ tsp grated nutmeg
½ tsp baking powder
Cream cheese icing
200g cream cheese
50g butter, softened
50g icing sugar
Zest of 1 orange
1 tsp vanilla extract
Method
Preheat the oven to 180 degrees
Grease and line a loaf tin with baking paper
For the cake
1.Beat the eggs, and add in the oil, grated carrot, sugar, and nuts and mix together.
2.Sift in the flour, cinnamon, allspice, nutmeg and baking powder and mix until well combined. I've used a wooden spoon but you can use an electric mixer too.
3.Pop the mixture into the loaf tin, and bake for 45 mins, or until a skewer inserted into the middle comes out clean.

For the icing
Mix the cream cheese and butter together in a bowl. Add the icing sugar, orange zest and vanilla extract, and mix until smooth and thick. Ensure your cake has cooled before spreading the icing evenly over the cake.
