Guyanese Fry Aloo (Potatoes)

A super quick and tasty vegan dish, that uses only a few ingredients is a popular dinner choice in most Guyanese households.
A simple and satisfying wholesome dish, I’m sharing my grandmother's recipe with you, so enjoy it!
Serve with: Fried Bakes or roti.
Ingredients:
4-5 medium potatoes, peeled, quartered, and chopped into 1 cm slices
1 medium onion, diced
4 sprigs of thyme
2 garlic cloves, diced
Salt and black pepper to taste
20ml of water
4 tbsp cooking oil
1 spring onion, sliced (optional garnish)
Method:
1. In a heavy based pan heat your cooking oil, add in your diced onions and crushed garlic, and fry until the onions start to become translucent, about 4-5 mins.
2.Add in your sliced potatoes, spread them out in the pan and leave the, to fry for 3-4 mins, they will start to brown a little, give them a quick stir and then add in your thyme and season with salt and black pepper to your liking. Add in the water and cover and leave to cook for a further 15 mins on medium heat. If the water begins to evaporate you can add in a little more to spot the potatoes from sticking to the bottom of the pan.
3.Turn off the head and garnish with spring onions if using.
